A classic brunch dish with English muffins, poached eggs, ham, and hollandaise sauce.
⭐ Ingredients
- 2 English muffins (split)
- 4 eggs
- 4 slices Canadian bacon
Hollandaise:
- 3 egg yolks
- 1/2 cup melted butter
- 1 tbsp lemon juice
👨🍳 Instructions
- Toast muffins and cook bacon
- Poach eggs in simmering water
- Blend yolks + lemon, slowly add butter
- Assemble and pour sauce on top
