As a personal chef who’s worked with everyone from professional athletes to families juggling a dozen food preferences, I’ve learned that the most important thing I can teach—whether I’m catering a dinner or leading a cooking class—is this: You’ve got what it takes to make great food.
Where Confidence Begins: Simplicity
Some of the best meals I’ve ever made used less than 10 ingredients. When you start with quality ingredients and understand how to season, you’re already ahead of the game. You don’t need a Michelin star to make memorable food—you just need a little guidance and the freedom to explore.
Here’s a quick example: A simple roasted chicken. Season it well. Roast it hot. Rest it longer than you think. That’s it. Serve it with a squeeze of lemon and some crispy potatoes, and you’ve just made a meal most restaurants would be proud to serve.
Learning by Doing
One of my favorite parts of teaching cooking classes—whether it’s one-on-one or a corporate team-building event—is watching someone go from “I’m not a good cook” to “I can’t wait to try this at home.” It’s not magic. It’s hands-on experience. Repetition. Asking questions. And of course, tasting everything along the way.
