There’s nothing quite like a true Neapolitan pizza—soft, airy crust, blistered edges, San Marzano tomatoes, fresh mozzarella, and that unmistakable wood-fired flavor. While most people assume this iconic Italian dish is impossible to recreate at home, I’m here to show you that with the right technique, it’s absolutely achievable.

This step-by-step guide gives you a taste of what that experience looks like.
What Makes Neapolitan Pizza Authentic?
Authentic Neapolitan pizza follows strict Italian standards:
- 00 Italian flour
- Naturally fermented dough
- San Marzano tomatoes
- Fresh mozzarella (preferably buffalo)
- High-heat cooking (800–900°F)
When done right, the result is a pizza that’s light, flavorful, and incredibly digestible.
Step 1: The Dough (This Is Where Most People Go Wrong)
Ingredients (Makes 4 pizzas):
- 1 liter water
- 60–65% hydration
- 600–650g Italian 00 flour
- 2g fresh yeast
- 18g sea salt
Method:
- Dissolve yeast in water
- Slowly incorporate flour
- Add salt last
- Knead gently—no overworking
- Bulk ferment for 8–12 hours
- Ball and rest another 6–8 hours

Step 2: Sauce – Keep It Simple
Forget cooking the sauce.
- Crushed San Marzano tomatoes
- Pinch of sea salt
- Optional: fresh basil
That’s it. Authentic Neapolitan pizza is about restraint.
Step 3: Cheese & Toppings
- Fresh mozzarella (sliced and drained)
- Extra virgin olive oil
- Fresh basil
Less is more. Overloading kills the crust.
Step 4: Stretching the Dough (Never Use a Rolling Pin)
Gently press from the center outward, leaving the edge untouched. This creates the airy cornicione (the crust ring).
Step 5: Cooking at Home
Best options:
- Outdoor pizza oven (Ooni, Gozney, etc.)
- Very hot conventional oven + steel (max heat, 60 minutes preheat)
Bake for 60–90 seconds in a pizza oven or 4–6 minutes indoors.
